So cheesy

Breakfasts today tend to be sugar bombs and at a same time quoted as healthy, but it's not that complicated  to brake a habit and switch occasionally to some nice savory food. It could actually be beneficial.
Seattle's Pike Place Market has some great breakfast eateries. Taste of Breadzel and Cheese Curds along with some Aztec mocha from Local Color cafe can walk you long trough the day with ,not only carbohydrates,but great protein induced energy .
At Beecher's Cheese Factory, you can watch a birth of your cheese curds and enjoy it immediately  with Italian style pretzel/bread called Breadzel.
This place also carry, according to them, World's best Mac and Cheese.





Cheese curds is typical North American
 light and mild 
 frish soft cheese. It is famous 
for its  springy or rubbery texture
For enhanced
taste it could be mixed with herbs etc..

Home made Breadzel can be made with any type of cheese mixed with yeast, flour and egg and of course some fresh oregano, thyme and sage .



Beecher's "World's Best" Mac & Cheese

Ingredients
 
Sauce
2 tablespoons unsalted butter
3 1/2 tablespoons all-purpose flour
1 1/2 cups whole milk
7 ounces Beecher’s Flagship Cheese, grated (about 1 3/4 cups)
1 ounce Beecher’s Just Jack Cheese, grated (1/4 cup)
½ teaspoon coarse salt
¼ to ½ teaspoon chipotle chili powder
1/8 teaspoon garlic powder

Pasta
6 ounces penne pasta (about 3 ¼ cups)
1 ounce (1/4 cup) Beecher’s Flagship Cheese, grated
1 ounce (1/4 cup) Beecher’s Just Jack Cheese, grated
¼ to ½ teaspoon chipotle chili powder Instructions
To prepare sauce, melt butter in a heavy-bottomed saucepan over medium heat and whisk in the flour. Continue whisking and cook for 2 minutes. Slowly add milk, whisking constantly. Cook until sauce thickens, about 10 minutes, stirring frequently. Remove from heat. Add cheeses, salt, chili powder and garlic powder. Stir until cheese is melted and all ingredients are incorporated, about 3 minutes. Set aside.

Preheat oven to 350F. Butter or oil an 8-inch baking dish. Cook penne 2 minutes less than package directions. (It will finish cooking in the oven.) Rinse pasta in cold water and drain well.
Combine pasta and sauce in a medium bowl; mix carefully but thoroughly. Scrape the pasta into the prepared baking dish. Sprinkle top with cheeses and then the chili powder.

Bake, uncovered, 20 minutes. Let stand 5 minutes before serving .


Aztec Mocha

Ingredients for 1 mocha cups:

  • 1 cups whole milk                                       
  • 1/2 small dried red chili
  • 1/2 cinnamon stick, broken in half
  • 2 shots espresso
  • 2 tbs sugar
  • 1/4 cup unsweetened cocoa
  • 2 tbs whipping cream

Hi Zexxyswife, love your blog and know that you're quite knowledgeable of coffee. Recently I tried in a cafe a small cup of coffee. I want to know more about it. I can't remember exactly it's name, sounds like "Rosierto". It's strong like espresso, very tiny only a mouth full per cup. The cafe keeper described that it's processed with high pressure and not diluted with much water. Do you know what's the exact name? Thanks

Hi Terrie,
I think you are talking about "cafe ristretto".
It is made in espresso coffee makers under high pressure (pump espresso machines), and you are right, it uses very small amount of water so it is called "short". With a good home pump espresso maker, you can make very similar good ristretto at home
